Heat dairy and dry ingredients

In a medium heavy-bottomed saucepan, whisk together the whole milk, heavy cream, granulated sugar and unsweetened cocoa powder until smooth and there are no lumps of cocoa. Place over medium heat and warm gently, stirring often, until the mixture is steaming and small bubbles appear at the edges (do not boil).

Melt chocolate

Remove about 1/2 cup of the hot milk mixture and stir it into the finely chopped bittersweet chocolate in a heatproof bowl to create a glossy chocolate emulsion. Return that chocolate mixture to the saucepan and whisk until fully incorporated.

Temper yolks

In a separate bowl whisk the egg yolks until smooth. Slowly pour about 1/2 cup of the hot chocolate-milk mixture into the yolks in a thin stream while whisking constantly to temper the yolks (this brings them up to temperature without scrambling).

Cook custard

Pour the tempered yolks back into the saucepan with the remaining hot mixture. Place the saucepan over medium-low heat and cook, stirring constantly with a heatproof spatula or wooden spoon, scraping the bottom, until the custard thickens enough to coat the back of the spoon (170–175°F / 77–80°C). This will take about 6–8 minutes. Do not let it boil.

Finish and chill

Remove the custard from the heat and stir in the vanilla extract and 1 tsp fine sea salt. Pour the custard through a fine-mesh sieve into a clean bowl to remove any coagulated bits. Cool at room temperature for 15–20 minutes, then cover the surface with plastic wrap (to prevent a skin) and refrigerate until fully chilled, at least 4 hours or overnight.

While the gelato base chills, prepare the cookie crumble. In a small sauté pan over medium heat melt the unsalted butter. Add the roughly chopped soft chocolate chip cookies, light brown sugar and 1/4 tsp sea salt. Stir constantly for 3–4 minutes until the sugar dissolves and the cookie pieces are toasted lightly and coated in the butter-sugar mixture. Turn off the heat and transfer to a plate to cool completely. Break any large clumps into bite-sized crumbs once cool.

Churn and Combine

Churn gelato

Set up your ice cream maker according to manufacturer instructions and ensure the gelato base is fully chilled. Churn the chilled custard in the ice cream maker for about 20–30 minutes until it reaches a soft, thick, spoonable gelato consistency (pebble-soft; gelato is denser than ice cream).

In the last 2–3 minutes of churning or immediately after stopping the machine, fold in about 1 cup of the cooled cookie crumble so it disperses evenly through the gelato. Reserve remaining crumble for topping or later use.

Harden slightly

Transfer the churned gelato to a shallow, airtight container in a single layer. Press a piece of plastic wrap directly onto the surface, sprinkle the remaining cookie crumble over the top (and optional dark chocolate shavings), and freeze for at least 2–4 hours to firm up to scoopable texture.

Serve

Before serving, let gelato sit at room temperature for 5 minutes to soften slightly. Scoop into bowls or cones, dust lightly with optional cocoa powder, and garnish with extra cookie crumble and dark chocolate shavings. Store leftovers in the freezer, tightly sealed, for up to 1 week for best texture.
