Prepare cheeses
Remove all cheeses from the refrigerator 20–30 minutes before serving so they come to room temperature. This enhances flavor and makes soft cheeses easier to cut.
Slice and portion cheeses
Trim rind only if desired. Cut the hard cheese (e.g., manchego, cheddar) into thin wedges or bite-size cubes (about 1/2" pieces). Leave the soft cheese (brie) whole, score a wedge so guests can ease out portions. Arrange cheeses in three distinct areas on the board to give visual separation and easy access.
Prepare meats
Fold or roll each slice of cured meat to create height and texture. For prosciutto, loosely fold into ribbons. For salami and soppressata, create small rosettes by folding and layering. Group meats into 2–3 small piles around the board, near complementary cheeses.
Place condiments and pickles
Spoon whole grain mustard into a small ramekin and place on the board. Spoon jam or honey into a separate small dish. Add the cornichons and olives in small bowls or directly on the board in clusters to prevent liquid from spreading.
Add fresh fruit and garnish
Arrange grapes, halved figs, or thinly sliced apple/pear around cheeses and meats. Place fresh herb sprigs for aroma and color, tucking them into gaps on the board.
Final composition and serving
Ensure there is balance across the board — a mix of colors, textures, and bite sizes. Provide small cheese knives, toothpicks, and napkins nearby. Serve immediately once assembled. If you need to hold it for up to 1 hour, keep loosely covered at cool room temperature; do not refrigerate assembled board as condensation will form.
