Prep

Chill and ready

Place the caviar tin (or jar) in the refrigerator until just before serving. Keep crème fraîche chilled. Finely snip chives with kitchen scissors and set aside on a small plate. Halve the lemon and keep nearby.

Warm blinis

Warm blinis briefly: 15–20 seconds in a 600W microwave on a damp paper towel or 30–45 seconds in a 300°F (150°C) oven. Warm until just pliable and not hot to the touch. Transfer to a serving plate and cover lightly with a clean towel to stay warm.

Soft-boil quail eggs

Bring a small pot of water to a gentle rolling boil. Carefully lower quail eggs into the water using a slotted spoon. Cook for 2 minutes 15 seconds for jammy yolks (2:00 for very soft). Immediately transfer eggs to an ice bath for 1–2 minutes to stop cooking.

Peel and halve

Gently crack shells all over and peel under running water. Pat dry and slice each egg in half lengthwise. Keep halves yolk-side up on a small dish until assembly.

Assembly

Portion crème fraîche

Using a small spoon, place about 1 teaspoon (approx. 5–6 g) of crème fraîche onto each blini or onto selected house crisps (reserve a few crisps plain for textural contrast). Smooth slightly to create a small shallow well to hold the caviar.

Spoon caviar

Using a mother-of-pearl spoon or a small non-reactive spoon (avoid metal if possible), gently spoon roughly 1.5–2 g of caviar onto the crème fraîche on each blini or crisp. Aim for about 20 g total caviar divided across 8–12 bites.

Top with quail egg

Place one quail egg half on 4–6 of the blinis (reserve other halves across the remaining blinis/crisps), positioning yolk-side up so the yolk adds creaminess beneath the caviar, or place egg halves adjacent for variety.

Finish and season

Lightly drizzle a tiny amount (about 1/4 tsp total distributed) of neutral oil over selected bites to add sheen. Sprinkle a very small pinch of fine sea salt across the blinis that do NOT carry caviar (salting directly on caviar should be avoided). Grind a single light pinch of black pepper over the quail egg halves only if desired. Scatter the snipped chives evenly over all assembled bites. Offer lemon wedges to pass around; a single gentle squeeze to an individual bite is optional.

Serve

Arrange blinis and crisps attractively on a chilled or room-temperature platter. Keep the extra caviar chilled and return to refrigerator between refills. Serve immediately so crisps remain crisp and eggs stay cool.
