Halve the cherry or plum tomatoes (or dice larger tomatoes) and place in a medium bowl.

Finely chop the red onion and basil; add them to the tomatoes.

Add 2 tbs extra-virgin olive oil, 1 tsp balsamic vinegar or lemon juice, 1 tsp minced garlic, 1/2 tsp salt and 1/4 tsp freshly ground black pepper. Stir to combine.

Let the mixture sit at room temperature for 10–15 minutes to macerate and allow flavors to meld. Taste and adjust seasoning if needed.

Bread & spread

Preheat oven to 425°F (220°C) or heat a skillet/grill pan over medium-high heat.

Brush both sides of 8 slices of baguette with 1 tbs olive oil.

Arrange bread on a baking sheet and toast in the oven for 5–7 minutes, flipping once, until golden and crisp. Alternatively, grill in the hot skillet 1–2 minutes per side until charred spots appear.

While still warm, spread about 1 tablespoon (total 1/2 cup divided) of softened goat cheese or cream cheese over each slice (about 1 tbsp per slice). Season the spread lightly with the 1/8 tsp salt and 1/16 tsp pepper.

Eggs & assembly

In a nonstick skillet, heat 1 tbs butter or olive oil over medium heat until shimmering.

Crack 4 large eggs into the skillet and cook to your preference: sunny-side up (cover skillet for 2–3 minutes to set whites), over-easy (cook 2–3 minutes then flip 20–30 seconds), or over-medium (flip and cook 1–2 minutes). Season eggs with 1/4 tsp salt and 1/8 tsp black pepper while cooking.

To assemble, spoon a generous tablespoon or two of the tomato topping onto each cheese-spread toast, distributing evenly.

Place a cooked egg on top of each bruschetta slice.

Garnish with 1–2 teaspoons grated Parmesan (if using), a sprinkle of red pepper flakes (if desired), and a few microgreens or extra basil leaves.

Serve immediately so the toast stays crisp while the egg yolk remains soft. Provide extra salt, pepper, and balsamic if guests want to adjust.
