Make honey simple (if needed)
Combine 1 oz honey and 1 oz hot water in a small container and stir until fully combined. This creates a pourable honey syrup that blends easily into the cocktail. Let cool briefly before using. If your honey is already runny, you can skip this step and use the honey measure directly.
Cocktail Preparation
Chill glass
Place a coupe or chilled cocktail glass in the freezer or fill with ice water to chill while you prepare the drink.
Combine ingredients
In a cocktail shaker, add 2 oz Dillon's Selby Pineapple Honey Gin, 0.5 oz Noa elderflower syrup, 0.75 oz fresh lemon juice, and 0.5 oz honey (or 0.5 oz of the prepared honey simple).
Wet shake
Add a generous scoop of ice (about 1 cup) to the shaker. Seal and shake vigorously for 12–18 seconds until the shaker is well-chilled and the outside becomes frosty.
Strain
Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or rocks glass (use a Hawthorne strainer and a fine mesh strainer) to remove ice shards and any pulp.
