Cocktail

Honey Simple (optional, to make honey easier to mix)

Method

Honey Simple (optional)

1

Make honey simple (if needed)

Combine 1 oz honey and 1 oz hot water in a small container and stir until fully combined. This creates a pourable honey syrup that blends easily into the cocktail. Let cool briefly before using. If your honey is already runny, you can skip this step and use the honey measure directly.

Cocktail Preparation

2

Chill glass

Place a coupe or chilled cocktail glass in the freezer or fill with ice water to chill while you prepare the drink.

3

Combine ingredients

In a cocktail shaker, add 2 oz Dillon's Selby Pineapple Honey Gin, 0.5 oz Noa elderflower syrup, 0.75 oz fresh lemon juice, and 0.5 oz honey (or 0.5 oz of the prepared honey simple).

4

Dry shake (optional)

If you used straight honey (not honey simple), perform a dry shake: seal the shaker and shake vigorously for 10–15 seconds without ice to help emulsify the honey with the citrus and syrup.

5

Wet shake

Add a generous scoop of ice (about 1 cup) to the shaker. Seal and shake vigorously for 12–18 seconds until the shaker is well-chilled and the outside becomes frosty.

6

Strain

Discard ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or rocks glass (use a Hawthorne strainer and a fine mesh strainer) to remove ice shards and any pulp.

7

Garnish and serve

Express a lemon twist over the drink to release oils and rub the rim with the twist, then drop it into the glass. Alternatively, garnish with a small pineapple wedge on the rim. Serve immediately.
