Half Panino (choose any; recipe shown: Turkey & Mozzarella Panino - half portion)
Half Salad — Caesar (half portion)
Half Salad — Mista (half portion)
Method
Half Panino (Turkey & Mozzarella) Directions
Layer 2 oz sliced turkey over the pesto, then place 1 oz fresh mozzarella on top. Add 0.25 cup baby arugula, sprinkle 0.125 tsp salt and 0.05 tsp black pepper evenly over the greens.
Close the sandwich and press lightly. Heat a panini press or skillet over medium heat. If using a skillet, place a heavy pan or foil‑wrapped brick on top to press.
Grill the sandwich 3–4 minutes per side (or 4–6 minutes total in a panini press) until bread is golden and cheese is softened/melted. Remove and let rest 1 minute. Cut the whole sandwich in half; serve one half as the half panino.
Half Caesar Salad Directions
Place 1 cup chopped romaine in a medium bowl.
Add 1 tablespoon Caesar dressing and toss gently to coat leaves evenly but not soggy.
Sprinkle 0.5 tablespoon freshly grated Parmesan and 2 tablespoons croutons over the dressed lettuce. Squeeze the 0.25 lemon wedge lightly over the top and finish with 0.05 tsp freshly ground black pepper. Toss once more and transfer half the prepared salad to the plate as the half Caesar portion.
Half Mista Salad Directions
Place 1 cup mixed salad greens in a bowl. Add 3 halved cherry tomatoes and 2 tablespoons thin cucumber slices.
Drizzle 1 tablespoon simple vinaigrette and 0.5 tsp olive oil over the greens. Season with 0.0625 tsp salt and 0.05 tsp black pepper.
Toss gently to combine and taste; adjust seasoning if needed. Transfer half of this prepared mista to the plate as the half mista portion.
