Cordial Base

Prepare apples
Peel, core and chop enough Granny Smith apples to yield about 3 cups chopped. Smaller dice extracts flavor faster.

In a medium saucepan combine the chopped apples, 1 cup granulated sugar and 2 cups water. Stir to mix.

Bring to a gentle simmer over medium heat. Reduce heat to low and simmer, uncovered, for 15–20 minutes, stirring occasionally, until apples are very soft and the liquid is fragrant and slightly syrupy.

Remove from heat. Use a fine mesh sieve or chinois set over a bowl and press the cooked apples through with the back of a spoon to extract as much liquid and pulp as possible. Discard solids or reserve for another use (compote).

While the cordial is still warm, stir in 2 tablespoons fresh lemon juice to brighten the flavor and help preserve color. Let the apple syrup cool to lukewarm (about 20 minutes).
Basil Infusion

Gently bruise the basil leaves by folding them or rubbing between your hands to release oils. If using peppercorns, slightly crush them with the flat of a knife.

Add the bruised basil (and peppercorns if using) to the warm apple syrup. Cover and let steep for 20–30 minutes for a pronounced fragrant basil note. Taste after 20 minutes and steep longer if you prefer stronger herbal flavor.

Strain the syrup again through a fine mesh sieve lined with cheesecloth into a clean container to remove basil leaves (and peppercorn bits). Press gently to extract all aromatic liquid. Discard solids.

If you want a clearer cordial, chill the strained syrup in the refrigerator and skim any settled sediment, or pass it through a fine coffee filter. Transfer the finished apple-basil cordial to a bottle and refrigerate. It will keep 7–10 days chilled.
To Serve

For each serving (makes 4 total): fill 4 tall glasses halfway with ice if desired.

Measure 45–60 ml (about 3–4 tbs) of the apple-basil cordial into each glass. Adjust to taste for sweetness and intensity.

Top each glass with 125 ml sparkling mineral water (chilled) and gently stir once to combine. For a long drink use more sparkling water; for a sweeter/stronger drink use less.

Garnish each glass with a fresh basil sprig and two thin green apple slices on the rim or floated on top. Serve immediately.
