Bergamot Cordial

Make cordial
Zest one bergamot to yield about 1 tablespoon of zest. In a small saucepan combine bergamot juice, water and sugar. Add the bergamot zest. Warm gently over low heat, stirring until sugar dissolves (do not boil). Once sugar is dissolved, simmer 1–2 minutes to marry flavors. Remove from heat and let cool. Strain out zest and transfer cordial to a clean bottle. Chill. Yields about 8 oz. Keeps refrigerated 2–3 weeks.
Jasmine Cordial

Concentrate tea syrup
Brew very strong jasmine tea (about double strength) by steeping jasmine tea leaves or bags in 3 oz hot water for 6–8 minutes. Strain. While still warm, stir in 3 tablespoons sugar until dissolved. Add the tablespoon of water if needed to help dissolve. Optionally add a few jasmine petals for extra perfume, cool, then refrigerate. Yields ~6 oz.
Honey-Rose Syrup

Make syrup
Combine honey and water in a small saucepan and warm gently, stirring until honey dissolves. Add dried rose petals and simmer on very low for 4–5 minutes to infuse. Remove from heat and let steep until cool (15–20 minutes). Strain out petals and transfer syrup to a jar. Refrigerate. Keeps 2 weeks.

Wet shake
Add ice to the shaker (about 4 cubes). Shake vigorously for 12–15 seconds until well chilled and slightly frothy.

Garnish
Float a single edible rose petal on the foam and rest a candied bergamot slice on the rim or gently on the surface. Serve immediately.
