Fruit Clarified Base

    Make fruit syrup

    Combine the chopped seasonal fruit, granulated sugar, lime juice, and 250 ml water in a medium saucepan. Bring to a gentle simmer over medium heat, stirring occasionally, until the fruit collapses and the sugar is fully dissolved (6–8 minutes). Remove from heat and let steep 10 minutes.

    Initial strain

    Pass the warm fruit mixture through a fine-mesh sieve or chinois into a bowl, pressing solids to extract as much liquid as possible. Discard solids or reserve for another use (compote). You should have roughly 300–350 ml of fruit liquid.

    Clarify using gelatin (quick method)

    Bloom 1 tsp gelatin in 2 tablespoons cold water for 5 minutes. Warm gently until dissolved (do not boil). Whisk the dissolved gelatin into the warm fruit liquid until homogeneous. Pour the mixture into a clean container and refrigerate undisturbed until fully set (about 2 hours). Once set, place the gelled fruit in a fine sieve lined with cheesecloth over a bowl and let it drain slowly in the refrigerator for 2–4 hours; the clear liquid that drips through is your clarified fruit essence. Alternatively, if using agar follow manufacturer instructions for setting and slow draining. This produces a clear, bright fruit concentrate suitable for the drink.

    Measure clarified concentrate

    After draining, measure out 120 ml of the clarified fruit concentrate for use in the cocktail. Reserve any extra for another beverage (keeps 3–4 days refrigerated).

Mint Concentrate

    Steep mint

    Place packed mint leaves and 2 tbs caster sugar in a heatproof container. Pour 125 ml hot (not boiling) water over the leaves and sugar. Stir to dissolve sugar, then let steep 10–12 minutes until intensely aromatic and cooled to room temperature.

    Strain and chill

    Strain the mint infusion through a fine sieve into a jar, pressing lightly on leaves to release flavor. Discard leaves. Chill the mint concentrate until cold. You should have roughly 100–110 ml; measure and use 45 ml for each batch (scale as needed).

Assembly & Garnish

    Combine clarified fruit and mint

    In a large pitcher or mixing container combine 120 ml clarified fruit concentrate and 60 ml mint concentrate (adjust to taste; the recipe serves 4 so scale volumes as indicated under Servings). Add the juice of one lime (about 30 ml) and stir gently to combine. If you prefer slightly sweeter, stir in up to 1–2 tbs simple syrup or reserved sweetened mint liquid.

    Add sparkling water

    Just before serving, pour 500 ml chilled sparkling mineral water into the pitcher and stir gently once to combine. Do not over-stir to preserve effervescence.

    Serve

    Fill 4 highball glasses with ice if desired. Divide the mixture among the glasses. Garnish each glass with a lime wedge and a mint sprig. Optionally, bruise a mint sprig before garnishing to release extra aroma.

    Final notes

    Taste and adjust: for more brightness add a squeeze of lime; for more mint character add a splash more mint concentrate (up to 10 ml per glass). The clarified fruit base can be made 24–48 hours ahead and kept chilled; add sparkling water just before serving to keep fizz.
