    Muddle

    Add the fresh raspberries and 4 basil leaves to a cocktail shaker or mixing glass. Add the simple syrup and gently muddle until the raspberries are broken down and the basil releases its aroma and oils. Aim for a textured, fragrant mash but avoid pulverizing seeds excessively.

    Combine

    Add the Old Tom gin, elderflower liqueur, fresh lemon juice and (if using) egg white to the shaker with the muddled fruit and basil.

    Dry shake

    If using egg white: dry-shake (no ice) vigorously for 15–20 seconds to emulsify and build a silky foam.

    Ice shake

    Add ice (about 1 cup) to the shaker and shake vigorously for 12–18 seconds until well-chilled and slightly frothy. This chills, dilutes, and integrates the flavors.

    Double strain

    Place a fine-mesh strainer over a chilled coupe or rocks glass filled with crushed ice. Pour the cocktail through a Hawthorne strainer and then through the fine-mesh strainer to remove seeds, pulp, and basil bits, yielding a smooth, brightly colored drink.

    Garnish & finish

    Thread a fresh raspberry onto a cocktail pick and add a lemon twist. Lightly smack and slap the remaining basil leaf or sprig between your palms to release oils, then tuck it into the glass as an aromatic garnish. Serve immediately.
