Rosemary-Infused Honey & Verjuice Base

    Sterilize equipment (optional)

    Ensure a small saucepan, heatproof jar (about 1-cup capacity), and a clean spoon are clean and ready. This helps the infusion keep fresh.

    Combine honey and cold water in a small saucepan and warm gently over the lowest heat, stirring just until the honey thins and becomes pourable (do not boil) — about 2 to 3 minutes. Warming makes the honey pick up rosemary flavor more readily.

    Remove the saucepan from heat and add the fresh rosemary sprigs to the warm honey-water mixture. Cover the pan or transfer mixture to a heatproof jar and let sit to infuse for 30 to 45 minutes for a pronounced rosemary aroma. For a milder flavor, infuse 15 minutes.

    After infusion, discard or reserve the rosemary sprigs for garnish (tasting preference). Strain the infused honey through a fine-mesh sieve into a bowl or measuring cup to remove any small needles or debris.

    Whisk in verjuice, fresh lemon juice, and the fine sea salt to the warm-but-not-hot infused honey until fully combined and smooth. The salt brightens the flavors and helps balance sweetness and acidity. If the honey has cooled and become too thick, warm very briefly (10–15 seconds) to make stirring easier, then allow to cool to room temperature.

    Taste the base: it should be sweet, herbal, and slightly tart. Adjust by adding up to 1 tablespoon more verjuice or a squeeze of lemon if you prefer more acidity, or up to 1 tablespoon more honey (warmed to mix) if you prefer sweeter. Once adjusted, let the base cool to room temperature (about 15–20 minutes).

Charcoal Emulsion & Final Assembly

    Make the charcoal emulsion: in a small bowl or jar, combine the activated charcoal powder with the optional neutral oil (0.25 tbs) and 2 tablespoons of cold sparkling water or plain cold water. Whisk or vortex vigorously until the charcoal is evenly suspended and there are no large lumps. The tiny amount of oil helps the charcoal suspend and gives a smoother mouthfeel; you may omit the oil if you prefer a fully water-based drink.

    In a pitcher, combine the cooled rosemary-verjuice-honey base with the remaining chilled sparkling water (about 4 cups). Stir gently to mix. Do not stir vigorously once sparkling water is added — you want to preserve effervescence. If your sparkling water is very carbonated, add the sparkling water in two additions, stirring gently after each.

    Add the charcoal emulsion to the pitcher and gently fold it in with a long spoon (perform 6–8 gentle strokes) until the liquid turns an even deep gray to black. Work gently to avoid losing too much carbonation.

    Fill serving glasses with ice cubes (roughly 1/2 cup of ice per serving). Pour the limonade noire over the ice, leaving about 1/2 inch headroom in each glass to preserve fizz.

    Garnish each glass with a fresh rosemary sprig and a thin lemon slice or wheel. If desired, express a little lemon over each drink or add a splash of extra verjuice/lemon wedge to taste for brightness.

    Serve immediately while sparkling and cold. Stir lightly in the glass before drinking if some charcoal has settled; for best presentation, serve soon after mixing so the black color is evenly suspended.

    Storage: any leftover base (honey + verjuice mixture without sparkling water) keeps refrigerated in a sealed jar for up to 2 weeks. The finished sparkling beverage is best consumed within a few hours; if stored, keep chilled and re-stir gently before serving.
