Build the drink
Fill a large wine glass or stemmed glass about three-quarters full with ice (roughly 1 cup).

Pour 1.5 oz elderflower liqueur (St-Germain) over the ice.

Add 0.25 oz fresh lemon juice to brighten and balance the sweetness of the liqueur.

Add 2 dashes of grapefruit bitters over the top to add aromatic citrus bitterness and complexity.

Pour in 3 oz dry sparkling wine (Prosecco or Cava) slowly to preserve effervescence. Leave a little room for soda.

Express oils from a grapefruit twist over the drink by holding the twist skin-side down and giving it a quick squeeze, then rub the rim of the glass with the peel if desired.

Float a thin grapefruit wheel on top or drop the twist into the drink. Add a mint sprig tucked against the glass rim if using.

Serve immediately while the sparkling wine is lively.
