Method

Prepare garlic-parsley butter

Soften butter

Bring the unsalted butter to room temperature so it is easily workable (about 20–30 minutes out of the fridge). If short on time, cut into small cubes to soften faster.

Sauté aromatics

Heat the olive oil over medium-low heat in a small skillet. Add the minced shallot and cook gently for 2–3 minutes until translucent but not browned. Add the minced garlic and cook for 30–45 seconds until fragrant.

Deglaze with wine and optional Pernod: pour the white wine (and Pernod if using) into the skillet, raise heat to medium, and let it reduce for about 1–2 minutes until mostly evaporated. Remove from heat and let cool slightly for 1–2 minutes.

Mix butter and seasonings: in a bowl, combine the softened butter with the cooled shallot-garlic-wine mixture, chopped parsley (reserve 1 teaspoon parsley for finishing), lemon zest, lemon juice, salt, and black pepper. Stir until evenly incorporated. Taste and adjust seasoning.

Portion butter: divide the garlic-parsley butter into 24 small equal portions (about 1 tsp each) if you have escargot shells or use larger portions if serving in a baking dish. You can use a piping bag or small spoon to portion.

Assemble and cook snails

Preheat oven: set oven to 200°C (390°F) for conventional, or 180°C (355°F) for fan-forced ovens. If using an escargot baking dish with indentations, place it on a baking sheet for stability. If using small ovenproof ramekins or a single shallow gratin dish, prepare accordingly.

Prepare snails: if using canned/jarred escargot, drain them well and pat dry lightly with paper towel to remove excess liquid. If they still have shells, ensure shells are clean and dry; if using shells, place one snail per shell and secure with a small amount of the garlic butter. If using loose snails, distribute snails evenly among indentations or around the dish.

Fill shells or dish with butter: place one snail into each shell indentation or ramekin, then spoon or pipe one portion of the garlic-parsley butter onto/around each snail so that it melts over it during cooking. If using a gratin dish, arrange snails in a single layer and dot each with butter.

Bake: place the prepared escargots (on the baking sheet) into the preheated oven and bake for 8–10 minutes until the butter is bubbly and edges of butter are lightly golden. For a browned top, switch to grill/broil for 1 minute but watch closely to avoid burning the garlic.

Finish with parsley: remove from oven and sprinkle the reserved teaspoon of chopped parsley over the snails for a fresh finish.

Serve

Plate: transfer shells or dish to a warm serving plate. Serve immediately with slices of crusty baguette to soak up the garlic butter, and lemon wedges on the side to squeeze over the snails to taste.

Safety and timing note: ensure snails are heated through (internal temperature should be hot and butter bubbling). Total cook time is short — serve right away for best texture and aroma.
