Prepare and chill glass
If desired, place a coupe or stemmed wine glass in the freezer for 5–10 minutes to chill, or fill it with ice and set aside while you build the cocktail.
Combine base ingredients
In a cocktail shaker, add 2 oz London Dry gin, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and 0.25 tsp orange blossom water. The orange blossom water is potent — measure carefully.
Dry shake (optional)
If you want a slightly silkier texture, give the mixture a quick (10 seconds) dry shake without ice to better integrate the orange blossom aromatics.
Shake with ice
Add a generous handful of ice to the shaker and shake vigorously for 12–15 seconds until well chilled (shaker should frost).
Strain and top with rosé
Double-strain the shaken mixture into the chilled coupe or a rocks glass filled with fresh ice. Immediately top with 2 oz Provence-style rosé wine, pouring gently to preserve the wine's aromatic profile. If you prefer a lighter, more effervescent finish, add about 1 oz dry sparkling water instead of or in addition to the rosé.
Garnish and finish
Float a thin lemon wheel on the surface and optionally place a single edible flower beside it. Serve immediately.
Notes
Adjust sweetness to taste — increase simple syrup by 0.25–0.5 oz if the rosé is particularly dry. Use a light, floral Provence rosé to complement the orange blossom; avoid heavily oaked or tannic wines.
