Make the fresh citrus mix

In a measuring pitcher combine the fresh lime juice (0.75 cups) and fresh lemon juice (0.25 cups). Add the simple syrup (0.5 cups) and stir until fully incorporated. This yields a balanced sweet-tart base for the mocktail.

Bruise the herbs

Place the mint leaves (12) and basil leaves (8) in a sturdy mixing glass or small bowl. Using the back of a spoon or a muddler, gently press (bruise) the herbs 6–8 times to release their essential oils. Do not pulverize — you want aromatics, not bitterness.

Add the bruised herbs to the citrus-simple mixture and let steep 5 minutes at room temperature to marry flavors. After steeping, strain the citrus-herb base through a fine-mesh sieve into a clean pitcher to remove leaves and any pulp. Use a spoon to press gently to extract the last bit of liquid, but avoid forcing bitter compounds from herb stems.

Prepare sparkling elements

To the strained citrus-herb base in the pitcher add the elderflower cordial (3 tbs). Stir gently to combine.

Pour in the chilled sparkling water (3 cups) and chilled ginger beer (1 cup). Stir once or twice gently to combine — you want to keep as much carbonation as possible. Taste and, if desired, adjust sweetness by adding up to 1 additional tablespoon simple syrup or more tartness with a splash of lime.

Add the cucumber slices (1/2 cucumber, thinly sliced) into the mix to infuse a clean, cooling flavor. Let the pitcher rest in the refrigerator 10–15 minutes to slightly chill and marry the flavors (or serve immediately over ice if preferred).

Serve over ice

Fill 6 highball or rocks glasses with ice (about 4 cups total divided among glasses). Strain the mocktail from the pitcher into each glass, dividing evenly. The recipe makes approximately six 8-oz servings.

Finish with optional accents

If using, add 1–2 dashes of aromatic bitters per glass for complexity (optional). Garnish each glass with a thin orange wheel, a small sprig of mint or basil, a cucumber slice, and an edible flower if desired.

Serve immediately while fizzy. Leftover mocktail will keep chilled and covered for up to 24 hours; stir gently before serving to reincorporate any settled flavors.
