Prepare and measure
Chill a coupe or Nick & Nora glass in the freezer (or fill with ice water) for a few minutes. Measure out tequila, Aperol, bergamot liqueur, lime juice, and simple syrup into a cocktail shaker.

Add ice and bitters
Fill the shaker with ice (enough to almost full) and add 2 dashes of orange or bergamot bitters if using. The ice cools and dilutes to balance the bright flavors.

Shake
Secure the shaker and shake vigorously for 12–18 seconds, until the exterior of the shaker feels very cold and properly diluted.

Strain
Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne and fine strainer to remove small shards of ice and any pulp from the lime juice.

Garnish and finish
Express the oils of an orange or bergamot peel over the drink, rub the peel on the rim (optional), and drop it or a lime wheel into the glass. Serve immediately.
