Strawberry Limoncello Base

Macerate strawberries
Place 6 hulled fresh strawberries in a mixing glass or small bowl. Add 15 ml simple syrup and 10 ml fresh lemon juice. Muddle gently until the strawberries are broken down but not completely pulverized — aim for a chunky purée (about 15–20 seconds).

Combine with limoncello
Pour 90 ml limoncello into the muddled strawberry mixture. Stir thoroughly for 10–15 seconds to combine and allow the alcohol to extract more color and aroma from the fruit. Let sit for about 1 minute to macerate further.

Optional step for a smoother base: If you prefer a silky, seed-free base, strain the mixture through a fine mesh sieve into a small pitcher, pressing on solids to extract liquid. Discard solids. For a more rustic, fruity drink leave the pulp.

Fill a large wine glass or spritz glass halfway with ice cubes.

Pour the prepared strawberry-limoncello base over the ice (about 120 ml of combined base — adjust to taste). If you strained the base, use the strained liquid; if not, pour the entire contents.

Top with 120 ml chilled prosecco. Pour gently to preserve bubbles. If you want a slightly lighter spritz, add 30 ml chilled club soda on top.

Stir gently once with a bar spoon (2–3 slow turns) to integrate without losing effervescence.
