Cocktail

Method

Prep & Rim

  1. 1

    Prepare glass

Rub the lime wedge around the rim of a chilled coupe or rocks glass. Dip the rim into the coarse salt or tajín to coat evenly. Set the glass aside.

Infuse & Mix

  1. 2

    Muddle chili

In a cocktail shaker, add the thinly sliced fresno chili (use half for mild heat, whole for more). Muddle gently 6–8 times to release oils and a touch of heat; avoid pulverizing to prevent excessive bitterness.

  2. 3

    Add liquids

Add the blanco tequila (2 oz), limoncello (1 oz), orange liqueur (0.5 oz), fresh lime juice (0.75 oz), agave syrup (0.5 oz), and the optional lime zest (0.25 tsp) into the shaker with the muddled chili.

  3. 4

    Shake

Fill the shaker with ice and shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

Strain & Serve

  1. 5

    Double strain

Double strain the cocktail into the prepared rimmed glass using both the shaker strainer and a fine mesh strainer to remove chili bits and seeds for a clean texture.

  2. 6

    Garnish

Float a thin slice of fresno chili on the surface or thread it on the rim. Optionally express a lime peel over the drink for extra aroma and discard or use as garnish.

  3. 7

    Serve

Serve immediately. Advise guests the drink has a gentle rising heat from the fresno; they can stir in the chili slice for more heat as they drink.
