Method
Preparation
- 1
Build and shake
Add 2 oz blanco tequila, 0.75 oz Aperol, 0.5 oz bergamot liqueur, 0.5 oz fresh lime juice, and 0.25 oz simple syrup (if you prefer a touch more sweetness) into a cocktail shaker.
- 2
Add ice and shake
Fill the shaker with about 1 cup of ice. Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker feels very cold and slightly frosted.
- 3
Prepare glass
Fill a rocks glass with about 1/2 cup fresh ice (or one large ice cube).
- 4
Strain and finish
Double-strain the shaken cocktail into the prepared rocks glass over the ice to remove small shards of ice and any pulp. This yields a clean, slightly bright presentation.
- 5
Garnish
Express a lime peel over the drink to release the oils, then drop a lime wheel or place a twist on the rim as garnish.
- 6
Serve
Serve immediately. The Spezzato is best enjoyed chilled and freshly made.
