Ginger-Lime Soda Base

Ginger-Lime Syrup

    Prepare ginger

    Peel the fresh ginger and finely grate it, or mince it very finely. You should have about 2 ounces (approx. 1/2 cup packed grated) of ginger.

    Combine the grated ginger, 1 cup water, and 1 cup granulated sugar in a small saucepan.

    Bring the mixture to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Reduce heat to low and simmer gently for 8–10 minutes to extract ginger flavor. Do not boil vigorously.

    Remove from heat and stir in the 1 tablespoon fresh lime zest. Allow the syrup to steep and cool for at least 20 minutes (longer for stronger ginger flavor).

    Strain the syrup through a fine mesh sieve or cheesecloth into a clean container, pressing on solids to extract as much liquid as possible. Discard solids. Stir in 1 ounce fresh lime juice into the warm syrup.

    Refrigerate the syrup until chilled. The syrup will keep in the refrigerator for up to 10 days.

Assembly & Serve

    Fill a tall glass with about 1 cup of ice cubes.

    Add 1.5–2 ounces (3–4 tablespoons) of the chilled ginger-lime syrup to the glass, depending on desired sweetness and ginger intensity.

    Slowly pour 12 ounces chilled club soda or sparkling water into the glass to fill. Stir gently once or twice to combine.

    Taste and adjust: add more syrup for sweetness/ginger or a squeeze of fresh lime for more brightness.

    Garnish with 1–2 lime wheels or a wedge and 4 fresh mint leaves if using. Serve immediately.
