Method
Gelato (Vanilla)

Prepare custard base
Warm 2 cups whole milk and 1 cup heavy cream with the scraped seeds of 1 vanilla bean (or 2 tsp vanilla extract) in a medium saucepan over medium heat until it just begins to steam — do not boil.

Whisk egg yolks and sugar
While the milk warms, whisk 4 egg yolks with 1 cup granulated sugar until pale and slightly thickened.

Cook custard
Cook the mixture over low-medium heat, stirring constantly with a wooden spoon or spatula, until it thickens enough to coat the back of the spoon (170–175°F / 77–80°C). Do not let it boil.

Cool and chill
Remove from heat, stir in 1 tsp salt and the vanilla pod (if using) removed or left to steep briefly, then strain the custard through a fine-mesh sieve into a clean bowl. Cool to room temperature, then cover and refrigerate until thoroughly chilled (at least 3–4 hours or overnight).

Churn
Churn the chilled custard in an ice cream maker according to manufacturer instructions until it reaches a soft-serve / scoopable consistency (typically 20–30 minutes). If desired, fold in 1/4 cup chopped dark chocolate in the last few minutes of churning for a stracciatella-style addition.

Harden
Transfer gelato to a shallow container, press plastic wrap directly on the surface to prevent ice crystals, and freeze for at least 1–2 hours to firm up before scooping.
Fruit Sorbet (Mixed Berry)

Make simple syrup
Combine 1 cup water and 0.75 cup granulated sugar in a small saucepan. Heat over medium, stirring until sugar dissolves. Remove from heat and cool to room temperature.

Cook fruit (optional for texture & safety)
If using frozen berries or prefer a very smooth, safe sorbet, place 3 cups mixed berries in a saucepan with half the cooled simple syrup and simmer gently for 3–5 minutes until berries are softened. Allow to cool slightly. (If using very ripe fresh berries, you may skip cooking and proceed to purée.)

Purée and strain
Place the cooled berry mixture (or raw berries) in a blender with the remaining simple syrup, 2 tbs lemon juice and a pinch of salt. Purée until smooth. Press the purée through a fine-mesh sieve to remove seeds for a silky sorbet.

Chill
Cool the strained purée in the refrigerator until thoroughly chilled (about 1–2 hours). Chilling improves texture when churning.

Churn
Churn the chilled berry purée in an ice cream maker according to manufacturer instructions until it thickens and has a sorbet-like texture (15–25 minutes).

Freeze briefly
Transfer sorbet to a shallow container, press plastic wrap onto the surface, and freeze for 30–60 minutes to firm up slightly for scooping.
Assembly & Serving

Portion two scoops per serving: using a chilled scoop, place one scoop of gelato and one scoop of sorbet (or two scoops of either, assorted) into chilled bowls or cups. Garnish with a few chopped dark chocolate pieces and a mint leaf if desired. Serve immediately.
