Fried Provolone Wedges

Prepare the cheese
Chill the provolone block in the freezer for 20–30 minutes to firm it (this helps prevent melting during frying). On a cutting board, slice the chilled provolone into 8 even wedges (about 3/4–1 inch thick). Return wedges to the refrigerator while you set up breading station.

Set up breading station
Place the flour in a shallow bowl and season with 1/2 tsp salt and 1/4 tsp black pepper. In a second bowl whisk the eggs with the milk. In a third bowl combine breadcrumbs, cornstarch (if using), 1/2 tsp garlic powder, 1/2 tsp dried oregano and remaining 1/2 tsp salt and 3/4 tsp black pepper; mix well.

Bread the wedges (double-coat)
Working one wedge at a time: dredge in seasoned flour, shaking off excess. Dip into egg wash, then coat completely with breadcrumb mixture, pressing firmly. For an extra-secure coating (recommended): return the wedge to the egg wash briefly and then back into breadcrumbs for a second coat. Place breaded wedges on a parchment-lined tray and chill in refrigerator 10–15 minutes to set the crust.

Heat oil
In a heavy-bottomed skillet or Dutch oven, pour oil to a depth of about 1" (approximately 1½–2 cups depending on pan). Heat over medium heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb piece — it should sizzle and brown in about 30–45 seconds.

Fry the wedges
Fry in small batches (do not crowd) for 1 to 1½ minutes per side until golden brown. Use a slotted spoon or spatula to carefully flip. The interior should be warm and melty but the outside crisp. If wedges brown too quickly before melting inside, lower heat slightly. Remove to a paper towel-lined tray to drain.

Keep warm
Keep fried wedges in a 200°F (95°C) oven on a wire rack while frying remaining batches to maintain crispness. Finish frying all wedges.

Build the sauce
Stir in tomato paste and cook 1 minute to deepen flavor. Add crushed tomatoes (or passata) and bring to a gentle simmer. Add granulated sugar, red pepper flakes, 1/2 tsp salt, and 1/4 tsp black pepper. Simmer gently for 8–10 minutes, stirring occasionally, until slightly thickened.

Deglaze with vodka
With the sauce at a gentle simmer, carefully add the vodka. Cook uncovered for 2–3 minutes to let the alcohol cook off and the flavor meld.

Finish with cream
Reduce heat to low and stir in the heavy cream. Simmer 2–3 minutes until the sauce is a uniform pink-orange color and slightly thickened. Taste and adjust seasoning. Stir in chopped basil and grated Parmesan, if using.

Keep warm
Keep sauce warm on the lowest heat setting while you finish frying the cheese. If sauce thickens too much, whisk in 1–2 tablespoons water or cream to loosen.

Place warmed vodka sauce in a shallow bowl or on a small plate for dipping.

Arrange 2 fried provolone wedges per serving on a platter or individual plates. Spoon a little extra sauce on the plate or drizzle lightly over wedges (avoid drowning to keep crust crisp).
