Marinate the Chicken
In a large bowl, mix the mayonnaise, salt, and black pepper. Add the chicken pieces and coat them well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Coating
In a shallow dish, place the flour. You can season the flour with additional salt and pepper if desired.
Fry the Chicken
Heat the oil in a deep frying pan over medium-high heat. Take the marinated chicken pieces out of the refrigerator. Dredge each piece in the flour, shaking off any excess.
Cook the Chicken
Carefully place the coated chicken pieces in the hot oil. Fry in batches for about 10-12 minutes or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 75°C (165°F).
Prepare the Toppings
While the chicken is frying, slice the pickled cucumber, mozzarella cheese, and roast beef. Set aside.
Assemble the Dish
Once the chicken is fried and drained on paper towels, top each piece with melted mozzarella cheese, sliced roast beef, pickled cucumber, and optionally, sliced jalapenos.
Serve
