Prepare the Chicken

Flatten the chicken breasts to about 1/2 inch thickness. Season both sides with salt and black pepper.

Dredge the Chicken

Set up a dredging station with one plate of flour, one plate with beaten eggs, and a third plate with grated Parmesan cheese. Dredge each chicken breast in flour, dip in eggs, and then coat with Parmesan cheese.

Cook the Chicken

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the chicken and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove chicken from skillet and set aside.

Make the Sauce

In the same skillet, add the remaining butter and minced garlic. Sauté until fragrant, about 1 minute. Add the chicken broth and lemon juice, scraping up any brown bits from the bottom of the skillet. Bring to a simmer.

Finish the Dish

Return the chicken to the skillet, spoon the sauce over the chicken, and let it simmer for an additional 2-3 minutes. Garnish with chopped parsley before serving.
