Dry shake (if using egg white)
In a cocktail shaker, combine gin, lemon juice, grapefruit juice, honey syrup, dry vermouth, orange bitters and the egg white (if using). Seal the shaker and dry shake (no ice) vigorously for 12–15 seconds to emulsify and build a silky foam.
Wet shake
Add a generous handful of ice to the shaker, then shake vigorously for 12–18 seconds until the shaker is well chilled and the exterior becomes frosty.
Strain
Double-strain the cocktail into a chilled coupe or Nick & Nora glass (or a rocks glass over fresh ice if you prefer). Double-straining through a fine mesh removes small ice shards and any egg solids for a clean texture.
Finish and garnish
