Prepare rim
Pour coarse salt or sugar onto a small plate. Run the lime wedge around the rim of a rocks or coupe glass to wet it, then dip the rim into the salt or sugar, twisting to coat evenly. Set the glass aside.
Place 1 tablespoon pomegranate seeds into the prepared glass (they will add visual appeal and a little texture). If using a lime wheel or mint, set it aside for garnish.
Cocktail
Add blanco tequila (2 oz), pomegranate juice (2 oz), orange liqueur (1 oz), fresh lime juice (0.75 oz) and agave syrup (0.5 oz) into a cocktail shaker.
Fill the shaker with ice (about 1 cup) to chill and dilute properly.
Secure the shaker lid and shake vigorously for 12–15 seconds, until the shaker is frosty on the outside.
Double-strain the cocktail into the prepared rimmed glass over fresh ice if serving on the rocks, or without ice for a up/dram style, using a Hawthorne strainer and fine mesh strainer to catch small ice shards and any pulp.
Garnish with the lime wheel on the rim and sprinkle the remaining pomegranate seeds on top (or let them settle into the drink). Optionally add a small mint sprig for aroma.
Serve immediately. Adjust sweetness in future batches by increasing or decreasing agave syrup by 0.25–0.5 oz as desired.
