Remove cream cheese and mascarpone from the refrigerator and let them sit at room temperature for 30–45 minutes until fully softened. This ensures smooth whipping.

Soften and prep

In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl with a hand mixer), add the softened cream cheese (8 oz) and mascarpone (4 oz). Beat on medium speed for 1 minute to start combining, then scrape down the sides.

Combine base ingredients

Add 3 tablespoons honey, 1 teaspoon finely chopped fresh rosemary, 1 teaspoon lemon zest, 1 teaspoon sea salt, and 1 teaspoon freshly ground black pepper to the cheese mixture. Beat on medium-high speed for 2–3 minutes until the mixture is light, airy, and smooth. Scrape the bowl as needed to ensure even mixing. Taste and adjust seasoning — add more salt, pepper, or honey to taste.

Add honey and flavorings

Transfer the whipped cheese to a serving bowl or small shallow dish. Smooth the top with a spatula, then create a shallow well in the center for garnish and drizzle. Cover and chill for at least 20 minutes to let flavors meld. The cheese can be refrigerated up to 24 hours; bring back to room temperature for 15–20 minutes before serving if chilled longer.

Finish and chill

Just before serving, drizzle the reserved 1 tablespoon honey over the top. Sprinkle the optional coarse sea salt and cracked black pepper across the top for contrast. Garnish with small rosemary sprigs. Serve with toasted baguette slices/crostini and 2 cups mixed crackers or sliced apples/pear.
