Chill serving platter
Start by placing a large shallow serving platter or tray in the refrigerator for at least 10 minutes or fill it with crushed ice and set aside so the oysters will stay cold when plated.
Shuck and check oysters
If oysters are not yet shucked, hold each oyster in a towel, insert an oyster knife at the hinge, twist to pop, run the knife along the top shell to release, discard top shell, then gently cut the muscle under the oyster to free it. Retain oyster liquor in the shell. Inspect each oyster and remove any bits of shell or grit. Work over a bowl to catch excess liquor.
Arrange on ice
Pile the chilled crushed ice in the prepared platter to create a stable bed. Nestle each shucked oyster, cup side down, on the ice so the oyster lies level and the liquor is retained.
Citrus Mignonette
Mince shallot
Peel and very finely mince the shallot so the pieces are almost paste-like; this ensures even flavor distribution and prevents large bites of raw shallot on the oyster.
Combine acids and shallot
In a small bowl, whisk together the red wine vinegar, fresh lime juice, and fresh lemon juice until combined. Add the minced shallot and stir to ensure the shallot is evenly suspended in the acid β this also slightly mellows the shallot flavor.
Rest and refrigerate
Cover the bowl and refrigerate the mignonette for at least 15 minutes (up to 2 hours). This resting time allows flavors to meld and the shallot to soften in the vinegar mixture.
Serve
Spoon about 1/2 to 1 teaspoon of the chilled citrus mignonette onto each oyster just before eating, or serve in a small bowl so guests can add to taste. Keep the mignonette chilled until serving.
