Clean mussels

Rinse the mussels under cold water. Discard any with cracked shells or that remain open when tapped. Scrub shells to remove debris and pull off beards. Keep chilled until ready to cook.

Finely chop the onion, thinly slice the garlic, and roughly chop the parsley. Measure wine and lemon juice.

Sweat aromatics

In a large heavy-bottomed pot or deep skillet with a tight-fitting lid, heat 2 tablespoons olive oil over medium heat. Add the chopped onion and a pinch of salt and sweat for 5–6 minutes until soft and translucent but not browned. Add the sliced garlic and optional red chili flakes and cook for 30–60 seconds until fragrant.

Add liquids and reduce

Pour in the white wine and lemon juice, increase heat to medium-high, and bring to a simmer. Allow the liquid to reduce slightly for 2 minutes to concentrate flavor.

Steam mussels

Add the cleaned mussels to the pot, drizzle the remaining 1 tablespoon olive oil over them, season with the teaspoon of black pepper and 1/2 teaspoon of the salt (reserve remaining salt to adjust at the end). Cover tightly and steam for 4–6 minutes, shaking the pot once or twice, until shells open. Discard any mussels that remain closed after cooking.

Finish sauce

Remove pot from the heat. With a slotted spoon, transfer most of the opened mussels to warmed bowls, leaving a few in the pot. If there is more than about 200 ml of liquid, simmer uncovered 1–2 minutes to concentrate. Stir in the butter and chopped parsley into the cooking liquid until butter melts and the sauce becomes glossy. Adjust seasoning with the remaining salt and a little more lemon juice if desired.

Serve

Pour the glossy wine-lemon sauce and mussels into serving bowls, ensuring each bowl gets plenty of broth. Serve immediately with crusty bread on the side for dipping and lemon wedges for squeezing over. Offer extra chopped parsley and chili flakes at the table.
