Sauté aromatics
Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Add the finely chopped onion and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.
Brown beef
Increase heat to medium-high and add the ground beef to the skillet. Break it up with a spoon and cook until no longer pink, about 6–8 minutes. Drain excess fat if needed, leaving about 1 tablespoon in the pan to carry flavor.
Simmer filling
Stir in the tomato sauce, diced tomatoes with green chiles, and 1/2 cup beef broth. Add 2 tablespoons chili powder, 1 teaspoon cumin, 1 teaspoon dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Bring to a simmer, reduce heat to low, and cook 6–8 minutes until slightly thickened. Taste and adjust seasoning. Remove from heat and set aside.
Enchilada Sauce (Rancheras-style)
Make roux
In a medium saucepan, heat 2 tablespoons vegetable oil over medium heat. Whisk in 2 tablespoons flour and cook, stirring constantly, for 1–2 minutes until lightly golden (this removes the raw flour taste).
Add spices and tomato paste
Stir in 3 tablespoons chili powder and (if using) 1 tablespoon ground ancho chile, 1 teaspoon cumin, 1 teaspoon garlic powder and 1 teaspoon oregano. Cook 30 seconds to bloom the spices. Add 2 tablespoons tomato paste and cook 30–45 seconds, stirring, to deepen the paste flavor.
Simmer sauce
Slowly whisk in 2 cups hot beef broth until smooth. Bring the sauce to a gentle simmer and cook 5–7 minutes until slightly thickened. Stir in 1 tablespoon white vinegar and 1 teaspoon salt. Taste and adjust seasoning and heat. Keep warm over very low heat.
Assembly and Baking
Preheat and prep tortillas
Preheat oven to 375°F (190°C). Warm 1/2 cup cooking oil in a shallow skillet over medium heat (or heat oil in a larger pan for easier dipping). Working one at a time, dunk each corn tortilla into the hot oil for about 5–8 seconds per side — you want them pliable, not crisp. Use tongs to transfer each tortilla to a plate lined with paper towels to drain briefly.
Assemble enchiladas
Spread about 1/2 cup of the warm enchilada sauce in the bottom of a 9x13-inch baking dish. Place a softened tortilla on a plate, spoon about 3 tablespoons of the beef filling down the center, then sprinkle about 2 tablespoons shredded cheese on top of the filling. Roll the tortilla tightly and place seam-side down in the prepared baking dish. Repeat with remaining tortillas, filling, and cheese.
Top and bake
Once all enchiladas are in the pan, pour the remaining warm rancheras sauce evenly over the top so all rolls are coated. Sprinkle the remaining shredded cheese (reserve a few tablespoons for garnish) evenly over the sauce. Bake in the preheated oven for 15–20 minutes, until cheese is melted and sauce is bubbling.
Finish and garnish
Remove enchiladas from the oven and let rest 5 minutes. Dollop or drizzle sour cream/crema across the top, sprinkle crumbled queso fresco or cotija, chopped cilantro, thinly sliced onion, and pickled jalapeños if using. Serve hot.
