Blend chickpeas
Place drained chickpeas, tahini, lemon juice and peeled garlic clove in a food processor or high-speed blender.

Process to smooth
Pulse and then process on high, scraping down the sides as needed, until the mixture is fairly smooth, about 1–2 minutes.

Adjust texture
With the processor running, drizzle in 2 tablespoons extra-virgin olive oil and 2 tablespoons cold water. Continue processing until very smooth and creamy, about 30–45 seconds. Add more water, 1 teaspoon at a time, if too thick.

Season
Add ground cumin, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Pulse to combine, taste, and adjust salt, lemon, or garlic as desired.

Finish
Spoon hommous into a bowl and smooth the top. Drizzle with a little olive oil and sprinkle 1/4 teaspoon paprika and chopped parsley for garnish. Optionally stir in 1/2 teaspoon lemon zest for brightness.

Spread hommous
Generously spread about 1/2 cup of prepared hommous onto one slice of bread (or both slices for extra). Reserve remaining hommous for another use.

Add cheese and season
Sprinkle 2 tablespoons crumbled feta or vegetarian cheese over the vegetables if using. Season the tomato and cucumber layers lightly with salt and freshly ground black pepper to taste.

Finish and serve
Scatter chopped parsley over the filling. Close the sandwich with the second bread slice, press gently, and cut in half if desired. Serve immediately, or wrap tightly and refrigerate up to 6 hours for a packed lunch.
