Prepare chickpeas
If using canned chickpeas, drain and rinse thoroughly. Pat dry lightly with paper towel to remove excess moisture.

Make hommous
In a food processor or high-speed blender combine chickpeas, tahini, 2 tbs olive oil, lemon juice, garlic clove, ground cumin, smoked paprika, 2 tbs cold water, 1 tsp salt and 1/4 tsp black pepper. Process until smooth and creamy, stopping to scrape down the bowl 2–3 times. If mixture is too thick, add up to 1 more tablespoon of water or olive oil to reach a spreadable consistency. Taste and adjust salt, lemon or garlic as needed.

Finish hommous
Transfer hommous to a bowl. Drizzle lightly with the remaining 1 tbs olive oil and sprinkle a pinch of smoked paprika on top for color. Reserve.

Season greens
Toss spinach and vegetables with lemon zest (if using), 1/4 tsp salt and 1/4 tsp black pepper. This light seasoning helps the greens flavor the sandwich without overpowering the hommous.

Optional: wilt spinach slightly
If you prefer softer spinach, heat a non-stick skillet over medium heat, add the dressed spinach and sauté for 30–45 seconds until slightly wilted, then remove from heat and let cool briefly.

Assemble sandwich
Spread about 1/4 to 1/3 cup of hommous evenly over each toasted bread slice. Top two of the slices with an even layer of the seasoned spinach and vegetable mixture. If using, sprinkle 1–2 tablespoons crumbled feta over the greens. Place the remaining bread slices (hommous side down) on top to form sandwiches.

Finish and serve
Press sandwiches gently, cut each in half on the diagonal, and serve immediately. If packing for later, wrap tightly in parchment or plastic wrap to keep the hommous from making the bread soggy for up to 3 hours.
