Prepare leaves
Open the jar of preserved grape leaves and place them in a colander. Rinse thoroughly under cold running water to remove excess brine. Separate the leaves so they lie flat.

If leaves are large and thick, blanch them in 2 cups of simmering water for 1 minute to make them more pliable, then transfer to an ice bath briefly and drain. Reserve 1 cup of the rinsing water for later if desired.

Line the bottom of a wide, heavy-bottomed pot with a few unfilled or torn grape leaves (this prevents sticking) and arrange thin lemon slices over them. This will be the bed for the rolled grape leaves.

Add the ground beef, breaking it up with a spoon. Cook until mostly browned, about 6 minutes. Drain excess fat if there's a lot, leaving a bit for flavor.

Add rice and seasonings
Stir in the rinsed rice and tomato paste, coating grains. Add ground cumin, allspice, salt, and black pepper. Pour in 1/2 cup hot water, stir, and cook for 2–3 minutes until the liquid is mostly absorbed. Remove from heat and let the mixture cool for 5 minutes.

Finish filling
Fold in chopped parsley and mint (if using). The rice should be partially cooked — it will finish cooking inside the rolls. Taste and adjust seasoning.

Scoop filling into a bowl and allow to cool enough to handle (warm is fine).

Roll the grape leaves
Working with one leaf at a time (shiny side down, stem end toward you), trim tough stems if needed. Place about 1 to 1.5 tablespoons of the meat-rice filling near the base of the leaf, slightly off-center. Fold the bottom over the filling, fold both sides inward, and roll tightly toward the tip to form a cigar-shaped parcel. Repeat until filling is used, arranging rolls seam-side down in the prepared pot in close rows.

Once all rolls are packed snugly, drizzle 1–2 tablespoons olive oil evenly over the rolls and pour the 2 cups chicken or vegetable broth around (not directly over) the rolls. Add a few lemon slices on top. Place a small, heatproof plate over the rolls to keep them submerged.

Bring the pot to a gentle simmer over medium heat, then reduce to low, cover, and simmer for 40–45 minutes until the rice is fully tender and meat is cooked through. Check after 30 minutes to ensure liquid hasn't boiled away; add a splash more broth or water if needed. Remove from heat and let rest, covered, for 10 minutes.

Make the hummus
In a food processor, combine drained chickpeas, 3 tablespoons tahini, 2 tablespoons lemon juice, grated garlic clove, and 1 tablespoon olive oil. Process until smooth. Add cold water, 1 tablespoon at a time, to reach a creamy but spreadable texture (about 2 tablespoons). Season with 1/2 teaspoon salt and pulse to combine. Adjust lemon and salt to taste.

Transfer hummus to a serving dish, use the back of a spoon to create a shallow well in the center, drizzle with 1 tablespoon olive oil and sprinkle smoked paprika and toasted pine nuts (if using).

Serve warm or at room temperature. Leftovers keep covered in the refrigerator for up to 3 days; reheat gently in a covered pan with a splash of broth.
