Prepare

1. Measure and bruise

Measure 4 cups cold water and 1/4 cup coarsely ground light-roast Arabic coffee. If using whole cardamom pods, lightly bruise 3 pods with the back of a spoon to release aroma. If using saffron, crush a pinch between your fingers or with a mortar and pestle.

2. Combine spices with coffee

In a small bowl, combine the 1 teaspoon ground cardamom with the coffee grounds. If using ground cloves or saffron, add them now and mix briefly so spices are evenly distributed.

Brew

3. Heat water

Place a dallah (traditional Arabic coffee pot) or a small saucepan over medium heat and pour in the 4 cups of cold water. Bring water to just below a gentle boil — small bubbles will form at the edge but it should not be a rolling boil.

4. Add coffee and spices

Reduce heat to low. Slowly add the coffee-and-spice mixture to the hot water while stirring gently to avoid clumping. Add the bruised whole cardamom pods if using. Keep heat low so the mixture gently simmers.

5. Simmer briefly

Allow the coffee to simmer gently for 7–10 minutes. Do not boil vigorously. During this time the grounds will infuse the water and aromas will develop. If using sugar, add it toward the last 2 minutes of simmering so it dissolves completely.

6. Settle the grounds

After simmering, remove the pot from heat and let it sit undisturbed for 2–3 minutes so grounds settle to the bottom.

7. Strain (optional)

Traditionally grounds are allowed to settle; however, if you prefer a cleaner cup, pour the coffee through a fine mesh strainer or a coffee sock into a serving pot, discarding the spent grounds and whole spices.

8. Serve

Pour small amounts into tiny demitasse cups (finjan). Cardamom pods may be added to each cup for presentation if desired. Serve hot alongside dates or small sweets. Reheat gently if making multiple rounds; avoid boiling to preserve flavor.

9. Storage

Leftover brewed Arabic coffee is best consumed immediately; if necessary store in a covered pot in the refrigerator for up to 24 hours and reheat gently. Do not reboil.
