Inspect and clean
Rinse both green and black mussels under cold running water. Discard any with cracked shells or that do not close when tapped. Remove beards by pulling toward the hinge and scrub shells with a brush if necessary. Place cleaned mussels in a bowl and sprinkle with 1 tsp salt; set aside in the refrigerator while you make the sauce (no more than 30 minutes).

In a large, heavy-bottomed deep skillet or Dutch oven, heat 3 tbs olive oil and 1 tbs butter over medium heat until the butter melts and foams. Add the finely chopped onion and a pinch of salt. Cook, stirring occasionally, until the onion is translucent and softened, about 6–8 minutes.

Stir in the red pepper flakes and smoked paprika and cook for 30 seconds to bloom the spices.

Tomato base
Add 2 tbs tomato paste and cook, stirring, for 1–2 minutes until the paste darkens slightly. Pour in 120 ml white wine to deglaze the pan, scraping any brown bits off the bottom. Let the wine reduce by about half, 2–3 minutes.

Add the 400 g crushed tomatoes and 120 ml stock. Stir to combine, then add 1 tsp caster sugar to balance acidity. Bring the sauce to a gentle simmer and cook uncovered for 8–10 minutes to thicken slightly.

Cook Mussels in Sauce

Increase the heat to medium-high so the sauce is simmering lightly. Add the cleaned mussels to the pot and give everything a gentle stir to coat them in the sauce.

Remove the lid and simmer for an additional 1–2 minutes to let the sauce cling to the shells and reduce slightly if needed.

Taste the sauce again and adjust acidity or heat — add more lemon juice for brightness or a pinch more red pepper flakes for heat.

Sprinkle the reserved chopped herbs over the mussels, drizzle with a little extra-virgin olive oil if desired, and serve immediately with lemon wedges and crusty bread or steamed rice to soak up the spicy tomato sauce.

If serving family-style, transfer mussels and sauce to a warmed shallow bowl. Ensure you serve tongs or a spoon for shells plus a bowl for discarded shells.
