    Make honey simple syrup (if not prepared)

    Combine equal parts honey and warm water (for example 1/4 cup honey + 1/4 cup warm water). Stir until fully dissolved. Cool to room temperature before using. Keeps refrigerated for up to 2 weeks.

    Fill a cocktail shaker halfway with ice.

    Add 2 oz Washington bourbon or rye, 1 oz Riesling, 1/2 oz fresh lemon juice, 1/2 oz honey simple syrup, 1/4 oz aperitif (if using), and 2 dashes orange bitters into the shaker.

    Cap the shaker and shake vigorously for 12–15 seconds until the outside of the shaker feels cold. The goal is to both chill and lightly dilute the drink so the wine integrates smoothly with the spirit.

    Double-strain the mixture into a chilled rocks glass over one large ice cube (or into a chilled coupe if you prefer it up). Use a fine mesh strainer in addition to the shaker strainer to catch any small ice shards or pulp from the lemon.

    Optional: Gently float 1/4 oz additional Riesling on top by pouring it over the back of a spoon so it sits as a light aromatic layer.

    Express the lemon twist over the surface of the cocktail by holding it peel-side down and giving it a quick fold to release oils, then rub the peel around the glass rim and drop it into the drink.

    Serve immediately. Note tasting notes: the Columbia Valley Riesling brings floral-fruity brightness and a touch of sweetness that plays against the warm spice of the local whiskey; honey and lemon round the edges for balance.
