Whisky Distillation Process

1. Mashing

Combine the malted barley, corn, and rye in a mash tun. Add hot water and allow to rest for about 1 hour, stirring occasionally. This process converts the starches into sugars.

2. Fermentation

Transfer the mash to a fermentation vessel and cool to around 20-25°C. Add the yeast and allow to ferment for about 3-5 days until bubbling stops and the specific gravity stabilizes.

3. Distillation

Once fermentation is complete, transfer the liquid (wash) to a still. Heat it gradually to separate the alcohol from the wash. Collect the distillate at different temperatures to separate heads, hearts, and tails.

4. Aging

Transfer the collected hearts into oak barrels for aging. Allow the whisky to mature for at least 3 years, but longer aging can enhance the flavor and character.

5. Bottling

Once the desired aging is complete, transfer the whisky from the barrels, filter if necessary, and bottle it for consumption.
