Bring water to boil
Place 6 cups of water in a medium pot and add 1 tablespoon kosher salt. Bring to a rolling boil over high heat.
Cook edamame
Add 12 oz frozen edamame (shelled or in pods) to the boiling water. Return to a boil and cook: 3–4 minutes for shelled edamame, 4–6 minutes for edamame in pods, until bright green and tender but still slightly firm. Taste one to check doneness.
Drain and cool
Drain the edamame in a colander and immediately rinse briefly under cold running water or transfer to an ice bath to stop cooking if you want them chilled. Shake well to remove excess water.
Seasoning
Season and finish
Transfer drained edamame to a serving bowl. Drizzle with 1 teaspoon extra-virgin olive oil (or 1/2 tsp toasted sesame oil for a nuttier flavor). Sprinkle 1 teaspoon sea salt or flaky finishing salt evenly. Add 1/4 teaspoon red pepper flakes if using and toss gently to coat. Squeeze the juice of half a lime over the edamame if desired and toss again.
Serve
Serve warm or chilled. If using edamame in pods, present with a small bowl for discarded pods and instruct diners to pop beans from pods with their teeth. For shelled edamame, serve directly as a snack, appetizer, or salad topper.
