Prep

If using frozen crawfish tails, thaw in the refrigerator overnight and drain well. Pat the tails dry with paper towels. Measure and chop all vegetables and aromatics so they're ready to go (mise en place).

Sauté the aromatics

Heat a large skillet over medium heat. Add the olive oil and 1 tablespoon of the butter. When the butter is melted and shimmering, add the diced onion, celery, and green bell pepper. Sauté, stirring occasionally, until softened and translucent, about 5–7 minutes.

Add garlic and tomato paste

Add the minced garlic and tomato paste to the skillet. Cook, stirring constantly, for 30–45 seconds until fragrant and the tomato paste darkens slightly.

Season

Stir in the cajun seasoning, paprika, black pepper, and half of the salt. Cook for 30 seconds to bloom the spices. If using hot sauce, add it now along with the Worcestershire sauce and stir to combine.

Deglaze & simmer

Pour in the chicken stock to deglaze the pan, scraping up any browned bits from the bottom with a wooden spoon. Let the stock reduce gently for 1–2 minutes.

Add crawfish

Add the crawfish tails to the skillet and toss to coat evenly in the seasoned mixture. Cook for 2–3 minutes, stirring occasionally, until the tails are just heated through and opaque (do not overcook).

Finish with cream & butter

Lower the heat to medium-low. Stir in the heavy cream and the remaining 2 tablespoons of butter. Allow the butter to melt and the sauce to come together, simmering gently for 1–2 minutes until slightly thickened.

Brighten & taste

Remove the skillet from heat. Stir in the lemon juice, chopped parsley, and sliced green onions. Taste and adjust seasoning with the remaining salt and additional black pepper or hot sauce if desired.

Rest briefly

Let the cooked crawfish sit for 1–2 minutes to allow flavors to meld before serving.

To Serve (optional)

Spoon the saucy crawfish meat over steamed white rice or tossed with hot cooked pasta. Alternatively, serve with slices of crusty french bread to soak up the sauce. Garnish with extra chopped parsley or green onions if desired.
