Pat dry and season

Pat the basa fillets dry with paper towels. Place them on a tray and sprinkle both sides with the fine sea salt and freshly ground black pepper. Drizzle the lemon juice over the fillets and rub the minced garlic across both sides. Let sit at room temperature for 10 minutes while you prepare the coating. This helps the seasoning penetrate and the fillets to dry slightly for better browning.

Prepare dry and wet stations

Set up three shallow dishes: 1) combine the all-purpose flour, cornstarch, paprika, and onion powder; 2) beat the eggs with the milk or water until smooth; 3) place the panko breadcrumbs in the third dish (or leave empty if skipping panko). The cornstarch in the flour mix adds crispness and helps the coating adhere.

Coat the fillets

Working with one fillet at a time, dredge the seasoned fillet in the flour mixture, shaking off excess, then dip into the beaten egg, letting excess drip back into the bowl, and finally press into the panko breadcrumbs (if using) or back into the flour for a second light dusting. Place coated fillets on a wire rack to rest for 5 minutes — this helps the coating set and prevents it from falling off during frying.

Heat the pan

Place a large nonstick or stainless steel skillet over medium-high heat. Add the neutral oil and heat until shimmering but not smoking (about 2–3 minutes). If using butter for flavor, add it to the oil just before adding the fish so it won’t burn.

Pan-fry the fillets

Gently place the coated basa fillets in the pan, leaving space between them. Cook for 3–4 minutes on the first side without moving, until the underside is deep golden brown. Carefully flip and cook the other side 2–4 minutes more, or until an instant-read thermometer inserted into the thickest part reads 60–63°C (140–145°F) and the fish flakes easily with a fork. For thinner fillets reduce cooking time slightly.

Rest and garnish

Transfer fillets to a plate lined with paper towels or a warm oven (100°C / 212°F) to keep warm for a few minutes. Spoon any pan juices over the fillets, sprinkle with chopped parsley, and serve with lemon wedges.

Make the sauce

In a small skillet over medium heat, warm the olive oil. Add the minced garlic and sauté 30–45 seconds until fragrant (do not brown). Add the white wine or fish stock and stir, scraping any browned bits from the pan. Reduce by half (about 1–2 minutes), then stir in the lemon juice and the tsp of butter until melted. Season with the 1/4 tsp salt and 1/8 tsp black pepper. Spoon the warm sauce over the cooked basa fillets just before serving.
