Surimi Base
Begin pulsing the fish until it breaks down into a coarse paste, about 30–45 seconds.
While processing, slowly drizzle in the vegetable oil and continue to process until incorporated and the paste is glossy.
Transfer the paste to a bowl chilled over ice. Add the potato starch and wheat starch in two additions, folding gently with a silicone spatula to combine. Do not overwork; the starch should be fully incorporated so the mixture is cohesive but still smooth.
Seasoning & Binding
Stir in the white pepper, lemon juice, and optional MSG (if using) into the surimi paste until evenly distributed. Taste a small cooked smear (see note) and adjust salt or sugar very slightly if necessary.
Flavor & Color Coating
In a small bowl, dissolve the crab extract or bouillon (if using) and paprika in the 2 tablespoons hot water to make a thin reddish coating liquid. Strain if there are lumps.
Take about 1/3 cup of the surimi paste and keep aside for inner filling if you prefer a two-tone look; otherwise all paste will be used for shaping. The remainder will form the white interior of the sticks.
Assembly & Steaming
Lay a piece of plastic wrap or parchment on the counter. Place a portion (about 3–4 oz / 80–110 g) of the white surimi paste in a log shape about 5–6 inches long and 1–1.25 inches wide. If making two-tone sticks, flatten the log slightly and brush or spoon a thin layer of the paprika-crab liquid over the top third of the log to create the red exterior. Roll tightly in the wrap to form a compact cylinder; twist the ends like a candy wrapper. Repeat to make 6 sticks.
Place the wrapped logs in a steaming basket, seam-side down, leaving a little space between them. If you have twine, you can tie ends to keep shape, but the wrap should hold it.
Steam over gently simmering water for 18–22 minutes, depending on thickness, until the internal temperature reaches 60–65°C (140–150°F) and the texture is firm and bouncy. Avoid aggressive rolling boil to prevent overcooking and drying.
Remove the basket and let the sticks cool to room temperature in their wrap for 10 minutes to set, then chill in the refrigerator (still wrapped) for at least 1 hour to fully firm. Chilling helps slicing and texture.
Once chilled, unwrap and, if you used a coated strip, you can gently press to ensure the red layer is adhered. Slice each cylinder diagonally into individual 'crab stick' pieces or leave whole as imitation surimi sticks.
Storage & Serving
Store in an airtight container in the refrigerator for up to 4 days or freeze for up to 1 month. Thaw in the refrigerator before using.
Serve chilled in salads, sushi rolls, or sliced with dipping sauce.
