Taco Filling

Cook the Beef
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.

Add Seasoning
Stir in taco seasoning and a little water (about 1/4 cup). Simmer for 5-7 minutes until the mixture thickens.

Prepare Toppings
While the beef is cooking, prepare the toppings by chopping the lettuce and tomatoes, and shredding the cheese.

Warm Tortillas
In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Rinse the Rice
Rinse the long-grain white rice under cold water until the water runs clear.

Cook the Rice
In a medium saucepan, combine the rice, chicken broth, tomato sauce, chopped onion, garlic powder, and salt. Bring to a boil.

Simmer
Reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the liquid is absorbed.
Assembly

Assemble Tacos
Lay a warm tortilla on a plate, add a spoonful of the beef mixture, and top with shredded lettuce, diced tomatoes, and cheddar cheese.

Serve with Rice
Serve the tacos alongside a generous scoop of Mexican rice and your choice of additional sides like guacamole, sour cream, or pico de gallo.
