Prepare the Chips
Preheat the oven to 180°C (350°F). Spread the corn tortilla chips evenly on a baking sheet. Bake for 10 minutes or until they are crispy and lightly golden.
Spicy Beans

Cook the Spicy Beans
In a skillet over medium heat, add olive oil. Once hot, add the canned black beans (drained and rinsed), chili powder, cumin, garlic powder, and salt. Stir and cook for about 5-7 minutes until heated through and slightly thickened.
Queso Amarillo

Make the Queso
In a saucepan, combine the shredded cheddar cheese, milk, cream cheese, and diced jalapeño. Heat over low-medium heat, stirring constantly until the cheese is melted and the mixture is smooth. Remove from heat.
Toppings

Prepare the Toppings
In a bowl, combine the shredded lettuce, diced tomatoes, jalapeño slices, and crema fresca. Toss gently to mix.
Assemble

Assemble the Nachos
On a large serving platter, layer the crispy tortilla chips. Top with the spicy beans, then drizzle with queso amarillo. Finally, add the prepared toppings. Optionally, sprinkle shredded chicken or shredded beef on top if desired.
