Preparing the House Relish

Make the Relish
In a medium bowl, combine the diced tomatoes, chopped red onion, chopped cilantro, lime juice, salt, and pepper. Stir well to mix all the ingredients together. Set aside to let the flavors meld.
Preparing the Fish

Grill or Fry the Tilapia
Season the tilapia fillets with salt and pepper. If grilling, preheat the grill to medium heat and cook the fillets for about 3-4 minutes on each side or until fully cooked. For frying, heat a pan with some oil over medium heat and fry the fillets for about 4-5 minutes on each side until golden brown and cooked through.

Warm the Tortillas
Warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side or until pliable.

Build the Tacos
Place a grilled or fried tilapia fillet in each tortilla. Top with lettuce, shredded cheese, and a generous spoonful of house relish. Optionally add slices of avocado and a drizzle of hot sauce, if desired.
