Method

Prepare the Chorizo

  1. 1

    Cook the Chorizo

In a medium skillet over medium heat, add the chorizo sausage. Use a spatula to break it apart while it cooks. Cook for about 7-10 minutes or until the chorizo is browned and fully cooked. Drain any excess fat if necessary.

Prepare the Toppings

  1. 2

    Prepare the Onion and Cilantro

While the chorizo cooks, dice the red onion and chop the fresh cilantro. Set aside for assembly.

  2. 3

    Prepare the Lime and Salsa

Cut the lime into wedges and set aside. Pour the salsa verde into a small serving bowl.

Assemble the Tacos

  1. 4

    Warm the Tortillas

In a separate skillet or on a comal, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

  2. 5

    Fill the Tacos

Once the tortillas are warm, place about 2-3 tablespoons of cooked chorizo in the center of each tortilla. Top with diced red onion and chopped cilantro.

  3. 6

    Serve with Lime and Salsa

Serve the tacos immediately with lime wedges and a small bowl of salsa verde on the side for drizzling.
