Method

Prepare the Carne Asada

    Marinate the Steak

    In a bowl, combine olive oil, minced garlic, cumin powder, chili powder, salt, and black pepper. Mix well.

    Add Steak to Marinade

    Place the flank steak in the marinade and ensure it is well-coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Grill the Steak

    Preheat your grill or grill pan over medium-high heat. Remove the steak from the marinade and grill for 5-7 minutes on each side, or until desired doneness. Let it rest for 5 minutes before slicing.

    Slice the Steak

    Slice the grilled flank steak against the grain into thin strips.

Make the Salsa Verde

    Cook Tomatillos

    In a pot, add quartered tomatillos, cover with water, and bring to a boil. Cook for about 5-7 minutes until soft.

    Blend the Salsa

    Drain the tomatillos and place them in a blender with cilantro, jalapeño, garlic, lime juice, and salt. Blend until smooth. Adjust seasoning as needed.

Assemble the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Fill the Tacos

    Place a generous amount of sliced carne asada in the center of each tortilla.

    Add Toppings

    Top each taco with diced red onion and chopped cilantro. Serve with lime wedges on the side.

    Serve the tacos warm with salsa verde on the side for dipping.
