Prepare the Al Pastor Pork

    Marinate the Pork

    In a large bowl, combine the diced pineapple, diced onion, minced garlic, dried oregano, ground cumin, chili powder, ground coriander, apple cider vinegar, salt, and black pepper. Mix well to create a marinade. Cut the pork shoulder into thin slices and add it to the marinade. Ensure all the pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Heat olive oil in a large skillet or grill over medium-high heat. Once hot, add the marinated pork slices in batches, allowing space between them. Cook for about 5-7 minutes per side or until nicely charred and cooked through. Remove from heat and let rest for 5 minutes before chopping into smaller pieces.

Assemble the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable. You can also wrap them in a clean kitchen towel and microwave for about 30 seconds.

    Fill the Tacos

    Take a warm tortilla and add a generous amount of the cooked al pastor pork. Top with chopped cilantro and add a squeeze of lime juice. If desired, add salsa for extra flavor.

    Serve

    Repeat the process for the remaining tortillas and pork. Serve the tacos immediately with lime wedges on the side.
