For the Breaded Chicken

Prepare the Chicken
Pat the chicken breasts dry with paper towels. Season with salt and black pepper on both sides.

Bread the Chicken
Coat each chicken breast in flour, dip in the beaten egg, and then coat with bread crumbs. Ensure even coverage.

Fry the Chicken
Heat oil in a large skillet over medium heat. Once hot, add the breaded chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and let drain on paper towels.
For the Chipotle Honey BBQ Sauce

Combine Ingredients
In a small saucepan, combine honey, BBQ sauce, and chipotle in adobo sauce. Stir well.

Heat the Sauce
Heat the mixture over medium heat until warmed through, stirring occasionally. Remove from heat and set aside.

In a large serving bowl, layer the mixed greens, shredded jack cheese, diced tomatoes, and tortilla strips.
