Shrimp Brochetas Recipe

Cilantro Lime Butter

Method

Preparing the Shrimp

    Marinate the Shrimp

    In a large bowl, combine olive oil, minced garlic, lime juice, chopped cilantro, salt, and black pepper. Add the large shrimp and toss to coat evenly. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, they are ready to use.

Making the Cilantro Lime Butter

    Mix Ingredients

    In a small bowl, combine softened unsalted butter, finely chopped cilantro, lime zest, lime juice, and garlic powder. Mix well until fully combined.

    Set Aside

    Transfer the cilantro lime butter to a serving dish and refrigerate until ready to use.

Making the Diablo Sauce (optional)

    Combine Ingredients

    In another small bowl, mix together sriracha sauce, ketchup, lime juice, cayenne pepper, and salt to taste. Adjust seasoning according to preference.

    Set Aside

    Keep the diablo sauce at room temperature until it's time to serve.

Grilling the Shrimp

    Skewer the Shrimp

    Thread the marinated shrimp onto the soaked or metal skewers, leaving some space between each shrimp for even cooking.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F/200°C).

    Grill the Shrimp

    Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.

    Serve

    Remove the shrimp from the grill and brush generously with cilantro lime butter. Serve immediately with the diablo sauce on the side for those who want extra heat.
