Preparation of Beans

    Soak Pinto Beans

    Rinse the pinto beans under cold water to remove any dirt or impurities. Place the beans in a bowl, cover them with water, and let them soak for at least 8 hours or overnight.

    Cook Pinto Beans

    Drain the soaked beans and transfer them to a pot. Add 3 cups of fresh water to the pot. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 1 to 1.5 hours, or until the beans are tender.

Making Refried Beans

    Sauté Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent and fragrant.

    Mash Beans

    Once the pinto beans are cooked and tender, drain any excess water and add them to the skillet with the sautéed onion and garlic. Use a potato masher or fork to mash the beans to your desired consistency.

    Season the Beans

    Add cumin, salt, and black pepper to the mashed beans. Stir well to combine the spices evenly, and cook for an additional 5 minutes, allowing the flavors to meld.

    Finish with Lime

    Remove the skillet from the heat and stir in 1 tablespoon of lime juice for added brightness. Adjust seasoning to taste.
